Parmesan Cod with Tomato and Basil

  • 1 ½ pound fresh or frozen cod (defrosted)
  • 1 large tomato, chopped
  • ¼ cup fresh parsley, finely chopped
  • 3 Tablespoons fresh basil, finely chopped
  • 2 cloves garlic, minced
  • ½ cup shredded parmesan cheese
    Preheat oven to 350 degrees. Mix tomato, parsley, basil, garlic and cheese; set aside. Place fish onto baking sheet that has been sprayed with cooking spray. Top with tomato mixture and bake 20 minutes or until fish flakes with fork.
