Ingredients

  • 1 can low sodium white beans
  • 1 can low sodium black beans
  • 2 cups low sodium vegetarian broth
  • 4-5 cloves garlic, minced
  • 1 teaspoon salt
  • 1 Tablespoon olive oil
  • ¼ cup uncooked brown rice or quinoa
  • ¼ cup lentils
  • 2 medium onions, chopped
  • 1-2 Tablespoons chili powder
  • 1 teaspoon crushed red pepper
  • 2 14-ounce cans low sodium diced tomatoes
  • 1 small can tomato paste.
    Directions…
    Drain and rinse beans. Add everything together into stock pot. Stir well. Bring to boil. Reduce heat and simmer 2 hours.
